Hailing from Canterbury, a northern region in the magical South Island of New Zealand, Theo's wine represents an initial journey in pursuit of soil in which to plant Pinot Noir, transformed by the pure joy of winemaking. Employing liberal use of amphorae and old oak, long fermentation and wild yeasts, the wines produced by Hermit Ram are initially a juxtaposition: rugged yet soft; raw yet elegant; purposeful yet permissive.
