This week's tasting is a gentler and more nuanced experience - a brief but unmissable exploration of the new classics redefining Japanese whiskey.
First up, Togouchi. From the Chugoku Jozo distillery comes this spicy, fiery opener that is aged not in a warehouse but in a train tunnel! Expect fennel, rye spice, and stone fruit, with a clean, dry finish.
We move on to a departure from the typical Japanese whiskey pallet with Kamiki Maltage. As the only known whiskey to be aged in cedar casks, expect a unique take on wood ageing. Crisp, fresh and herbal notes take the place of the regular caramel and nuts that oak imparts, but the finish will keep you guessing.
Finally, it's time for a Boxcar favourite: Nikka From The Barrel. This cask-strength oddity is bold and assertive in a way you may not expect. Big flavours of toffee apple and deep, rich vanilla (like the good vanilla you brought back from vacation) will make you wish you had more - thankfully, you've got 2oz to work with!
